A Ridiculous Discovery


When planting zucchini earlier this summer, I made a mental note to myself that I would not be one of those gardeners that forgets about the veggie patch only to discover a monster size squash hidden under the leaves. I'm my own worst nightmare. Take a look at Twin A and Twin B. Most weeks I harvested the veggies at least two times. But these babies were a surprise to find yesterday. One weighs 8 lbs and the other 5 lbs. PLEASE send me your recipes.

Oh wow Mrs Mac, those are great.

We have a gourd which is almost like a zuchini. Sometimes they are hidden under the leaves and get very large. Butwe can 't cook them as they develop hard veins, so i give them to people with goats, their animals eat them.

I would stir fry the zuke in a little oil with chopped up onions, garlic, salt/pepper and a little powders cummin. Add some cghopped up tomatoes to it.

I'll send along a bread recipe later, but the easiest way I've found to use them is to wash and then slice thinly ... roll in a mixt of corn meal & flour & fry ... they are so good this way.
Another way we use them is to grate them then add an egg, flour, cornmeal and shape into patties, then either bake or fry.
You can also grate them & put them into the freezer for a couple of months & then use later.

Wow! Those are state fair sized zucchini!
When you've compiled all the recipes, send me a sample package...I prefer it made into bread with a steaming cup of coffee...the only way to eat your veggies!

Well, at least you have a healthy crop of 'em'. Every year ours always succombed to some sort of leaf wilt...underground troubles I suspect. This year we didn't plant a garden and didn't miss the work a bit. But then again, a few veggies would have been nice. We use them in stir-frys and sliced thin in salads. Plus the pan-fried yummies which DH & I are getting to old to eat so much margarine & oil..in the skillet......Re/yarn. Yes while steaming it, it does smell like strawberry flavor..very nice. Only the striped wool was dyed with Kool-Aid though. The solid colors were done using commercial dye. And, you wouldn't believe how much yardage it takes to actually knit something. So, I spin on...and on. But I do enjoy the process ever so much!! Hope you're having a tranquil kind of day. I like the crispy fall like weather. I haven't even missed the sunshine today, whoops, it just made it through the fog even as I was typing this. I'd better get a move on..maybe to go out and pick apples or play my cello? Mmmmm

Wow! I'm with Pat...I've made several batches of Zucchini bread this season. Those things are HUGE!

Mrs. Mac, Maybe you should just forget about picking the produce until the end of the season so you can find more giant vegetables. I don't eat vegees so I don't know if their not supposed to be big. Anyway, I'm impressed.

holy cats!

use a cake mix... substite water in cake mix for 3/4 grated zucchini!

I've heard you can also slice and freeze. I've not confirmed this because I didn't get enough to try.

None of my kids weighed over eight pounds, and one only weighed four, when they were born!

The twins were four and seven and a half pounds respectivelly for Mike and Mitch.

Yep zuchinni is the mother of all veggies. I planted crooked neck squash this year and let one go and it got as large as huge zucchini! It wasnt any good though. The inside was a mass of dead seeds and all soft.
